We’ve been keeping it a bit quiet but now’s the time to let you all know what’s been happening in the mash tun. Back in January we started experimenting with an old hopping method called mash hopping. By adding fresh whole leaf hops to the top of the grain bed just prior to sparging we can extract additional hop flavours without increasing the overall bitterness. Initial trials proved very successful and feedback was very positive. We revamped our recipes following the hop shortage and ‘Gold’ was the first beer to get the full mash hopping treatment. All of our beers now utilise this unique hopping method. We think it gives our beers a much more complex flavour profile and a certain refinement and balance.
